Ushimaru Restaurant Blending Tradition with Modernity

Nestled in the scenic countryside of Sammu City, Japan, Ushimaru Restaurant stands as a testament to culinary excellence and architectural ingenuity. Designed collaboratively by Axel Vansteenkiste Architecture and side by side architects, this European-style establishment embraces its natural surroundings, sourcing ingredients from the neighboring fields and ocean to craft exquisite dishes served on handmade glassware, reflecting the ever-changing tapestry of seasons.

A Vision Transformed

The project aimed to enhance the dining experience by expanding the space and introducing new elements while seamlessly integrating them with the existing structure. A new entrance, lounge area, and kitchen spaces were added, allowing guests to immerse themselves in the picturesque landscape. The design focused on opening up the once introverted dining space to offer panoramic views of the surrounding countryside, while also revitalizing the interior finishes to create a harmonious blend of old and new.

Architectural Harmony

Drawing inspiration from the existing building’s layout, the new addition features two distinct volumes that echo the architectural rhythm of the original structure. A striking 45-degree pitched roof shelters the lounge area, framing vistas of the agricultural landscape and guiding guests towards the welcoming entrance. The juxtaposition of tall, exposed timber beams with low, opaque volumes emphasizes the contrast between the different parts of the building, while silver galvalume cladding seamlessly integrates the addition with its surroundings.

Design Details

Inside, a wood-clad service wall spans the length of the dining space and lounge, providing storage, service access, and reception counters to maintain a clean and flexible environment. Crisp aluminum window frames and polished screed floors imbue the lounge with a contemporary feel, while warm parquet floors, wood window frames, and bespoke glass light fittings create an inviting atmosphere in the dining area. Collaborating with SUGAHARA GLASSWORKS INC., custom handmade glass fixtures and door handles were crafted to echo the restaurant’s commitment to artisanal craftsmanship and attention to detail.
